Ingredients

  • 5 cans Northern white beans
  • 3 qt. chicken broth
  • 2 tbsp. canola oil
  • 2 onions, chopped
  • 2 cloves minced garlic
  • 8 oz. chopped green chilies
  • 4-6 chicken breasts cooked and shredded
  • 3-4 tsp. cumin
  • 3-4 tsp. oregano
  • 3-4 tsp. coriander
  • pinch of cloves
  • pinch of cayenne

Instructions

  1. Saute onions and garlic in canola oil, then add cumin, oregano, coriander, cloves, and cayenne.
  2. Cook until onions are clear.
  3. Add beans, chicken broth, and salt, then bring to a simmer.
  4. Mash half of the beans in the pot.
  5. Add cooked shredded chicken and green chilies.
  6. Stir and let simmer for 20 minutes.
  7. Serve in bowls topped with shredded cheese and chopped green onions.
  8. Optional: serve with jalapeno or cheese cornbread.
