Ingredients

  • 1/2 cup dried apricots
  • 1/2 cup dates
  • 1 cup chopped walnuts
  • 3 cups flour
  • 3 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 1/2 teaspoons salt
  • 1 cup brown sugar
  • 1 egg
  • 1 cup milk
  • 1/2 cup maple syrup

Instructions

  1. Cover apricots with hot boiling water for 15 minutes and drain.
  2. Mix dried apricots, dates, and chopped walnuts.
  3. Sift together the flour, baking powder, baking soda, and salt.
  4. Add brown sugar to the dry ingredients and blend well.
  5. Add the beaten egg, milk, and maple syrup to the mixture and stir until combined.
  6. Pour the batter into 2 well-greased loaf pans.
  7. Let the batter stand for 15 to 20 minutes.
  8. Bake at 350°F (175°C) for 50 minutes.
