Ingredients

  • 4 Tbsp. unsalted butter
  • 1 medium red bell pepper, finely chopped
  • 1/4 c. sliced green onion
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • 4 oz. Monterey Jack cheese, grated
  • 5 slices thick-cut bacon, halved crosswise
  • 1 1/4 c. finely chopped onions
  • 1 Tbsp. soy sauce
  • 1/2 lb. ground pork
  • 1 lb. ground beef
  • 1/2 lb. ground veal
  • 1/2 c. ketchup
  • 3/4 c. saltine cracker crumbs
  • 1/3 c. canned beef broth
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. hot pepper sauce

Instructions

  1. In a large skillet, melt the butter over medium heat.
  2. When it foams, add the chopped onion, chopped red bell pepper, sliced green onion, and minced garlic.
  3. Cover and cook for 5 minutes.
  4. Uncover and cook, stirring often, for another 4 to 5 minutes or until vegetables are lightly browned.
  5. Remove from heat and let cool to room temperature.
  6. Preheat the oven to 350°F and position a rack in the middle.
