Ingredients

  • lettuce (iceberg, bibb, and/or romaine)
  • spinach
  • 1 large can artichoke hearts, drained and quartered
  • 1 large can LeSueur peas, drained
  • 1 large red onion, thinly sliced
  • 1/2 cup crumbled Bleu cheese
  • 1 small can mandarin oranges
  • 1 ripe avocado, sliced
  • 3/4 cup oil
  • 1/4 cup wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Combine oil, vinegar, salt, sugar, and pepper to make the dressing.
  2. Marinate artichoke hearts, peas, and red onion in the dressing overnight.
  3. Wash and chill the greens, then tear them into bite-sized pieces and place in a glass serving bowl.
  4. Add the crumbled Bleu cheese, mandarin oranges, sliced avocado, and marinated vegetables to the greens.
  5. Toss the salad well to combine and serve.
