Tomato And Chive Soup
A velvety tomato and chive soup with aromatic vegetables and a hint of curry, perfect for a comforting appetizer or light meal for any season.
Ingredients
- 2 Tbsp. butter or margarine ⓘ
- 2 onions, chopped ⓘ
- 2 carrots, chopped ⓘ
- 2 leeks, chopped ⓘ
- 2 cloves garlic, minced ⓘ
- 1/2 tsp. curry powder ⓘ
- 1/2 c. flour ⓘ
- 2 (6 oz.) cans tomato paste ⓘ
- 4 c. chicken broth ⓘ
- 3 c. tomato juice ⓘ
- 1/2 c. dry white wine ⓘ
- salt and pepper to taste ⓘ
- 1/2 c. sour cream ⓘ
- 2 tomatoes, chopped ⓘ
- 1/4 c. snipped fresh chives ⓘ
Instructions
- Melt butter in a heavy saucepan over medium heat.
- Saute chopped onions, carrots, leeks, garlic, and curry powder until vegetables are soft but not browned.
- Stir in flour and tomato paste until well combined.
- Immediately reduce heat and stir in chicken broth, tomato juice, white wine, salt, and pepper.
- Simmer gently for 1 hour.
- Strain the soup if desired before serving.
- Garnish with chopped fresh chives and a dollop of sour cream.
