Ingredients

  • 2 Tbsp. butter or margarine
  • 2 onions, chopped
  • 2 carrots, chopped
  • 2 leeks, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp. curry powder
  • 1/2 c. flour
  • 2 (6 oz.) cans tomato paste
  • 4 c. chicken broth
  • 3 c. tomato juice
  • 1/2 c. dry white wine
  • salt and pepper to taste
  • 1/2 c. sour cream
  • 2 tomatoes, chopped
  • 1/4 c. snipped fresh chives

Instructions

  1. Melt butter in a heavy saucepan over medium heat.
  2. Saute chopped onions, carrots, leeks, garlic, and curry powder until vegetables are soft but not browned.
  3. Stir in flour and tomato paste until well combined.
  4. Immediately reduce heat and stir in chicken broth, tomato juice, white wine, salt, and pepper.
  5. Simmer gently for 1 hour.
  6. Strain the soup if desired before serving.
  7. Garnish with chopped fresh chives and a dollop of sour cream.
