Ingredients

  • 4 whole chicken breasts, skinned and boned
  • 3/4 cup grated Cheddar cheese
  • 1 (8 oz.) package cream cheese
  • 2 to 3 scallions, chopped
  • 3/4 cup sliced mushrooms
  • 2 beaten eggs
  • 2 tablespoons oil
  • 1 cup seasoned breadcrumbs
  • 1 cup flour

Instructions

  1. Mix grated Cheddar cheese and softened cream cheese together.
  2. Fold in chopped scallions and sliced mushrooms into the cheese mixture.
  3. Spread the cheese mixture evenly on each chicken breast.
  4. Fold each chicken breast in half and secure with toothpicks.
  5. Dredge the stuffed chicken breasts in flour, then dip into beaten eggs.
  6. Coat the chicken breasts with seasoned breadcrumbs.
  7. Heat oil in a skillet and cook the chicken until golden brown on all sides.
  8. Transfer to a baking dish and bake at 375°F (190°C) for about 20-25 minutes until cooked through.
