Ingredients

  • 12 thick slices of tomatoes
  • 2 (10 oz.) packages frozen chopped spinach
  • 1 cup soft bread crumbs
  • 1 to 1½ cups finely chopped green onions
  • 6 eggs, slightly beaten
  • ¾ cup melted butter or margarine
  • ½ cup Parmesan cheese
  • ½ teaspoon salt
  • ½ teaspoon thyme
  • hot sauce to taste

Instructions

  1. Arrange tomato slices in a lightly greased 13 x 9 x 2-inch baking dish; set aside.
  2. Cook spinach according to package directions.
  3. Drain well to remove excess water.
  4. Add remaining ingredients, stirring well.
  5. Mound mixture on tomato slices.
  6. Bake at 350°F for 15 minutes or until spinach mixture is set.
