Ingredients

  • 2/3 cup sugar
  • 1/3 cup shortening
  • 2 eggs
  • 1 cup mashed ripe bananas
  • 1/4 cup buttermilk
  • 1 1/4 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon soda
  • 1 cup whole bran
  • 3/4 cup chopped dried apricots
  • 1/2 cup chopped nuts

Instructions

  1. Cream sugar and shortening together until well blended.
  2. Add eggs thoroughly and mix well.
  3. Combine mashed bananas and buttermilk in a separate bowl.
  4. In a separate bowl, mix dry ingredients: flour, baking powder, salt, and soda.
  5. Gradually add dry ingredients to creamed mixture alternately with banana mixture, starting and ending with dry ingredients.
  6. Stir in whole bran, chopped dried apricots, and chopped nuts until evenly distributed.
  7. Pour batter into greased loaf pans.
  8. Bake about 60 minutes or until a toothpick inserted into the center comes out clean.
