Ingredients

  • 2 cups cooked turkey cubed
  • 1 medium onion chopped
  • 1 teaspoon salt
  • 1/2 teaspoon poultry seasoning
  • 4 eggs
  • 3 cups milk
  • 1 cup diced celery
  • 1/2 cup mayonnaise
  • 1/2 teaspoon pepper
  • 10 slices bread
  • 1 can mushroom soup
  • 1 cup grated cheese
  • sliced ripe olives

Instructions

  1. Combine cooked turkey, chopped onion, salt, and poultry seasoning in a bowl.
  2. In a separate bowl, beat together eggs, milk, diced celery, mayonnaise, and pepper.
  3. Cut crusts from bread and cut into cubes.
  4. Arrange bread cubes in the bottom of a greased 9 x 13-inch pan.
  5. Place the turkey mixture on top of the bread.
  6. Pour the egg mixture over the casserole and let stand overnight in the refrigerator.
  7. Before baking, top with mushroom soup and grated cheese.
  8. Bake at 325°F (163°C) for 1 hour and 15 minutes.
  9. Add sliced ripe olives before serving.
