Ingredients

  • 2 c. cubed roasted turkey
  • 1/2 c. chopped onion
  • 1/4 c. chopped green pepper
  • 3 Tbsp. margarine
  • 1/4 c. flour
  • 2 c. canned chicken broth
  • 3 Tbsp. diced pimento
  • 1/4 c. sliced almonds
  • 1/8 tsp. pepper
  • 3 c. cooked rice
  • 1/2 c. shredded Cheddar cheese
  • paprika

Instructions

  1. Saute chopped onion and green pepper in margarine for 3 minutes.
  2. Stir in flour to form a roux.
  3. Gradually add canned chicken broth, stirring constantly.
  4. Cook over medium heat until the mixture thickens.
  5. Add diced pimentos, sliced almonds, pepper, cubed turkey, and cooked rice.
  6. Stir to combine all ingredients thoroughly.
  7. Pour the mixture into a 2-quart casserole dish.
  8. Sprinkle shredded Cheddar cheese and paprika over the top.
  9. Bake at 350°F for 30 to 40 minutes until bubbly and golden.
