Twin Peak Crab

Ingredients
- 1 medium onion, chopped ⓘ
- 1/2 green pepper, chopped ⓘ
- 2 large stalks celery, chopped ⓘ
- 1 egg
- 1 tsp. Grey Poupon mustard ⓘ
- 1 Tbsp. ketchup
- dash of Tabasco sauce
- 1 lb. crab meat ⓘ
- Old Bay seasoned bread crumbs ⓘ
- salt and pepper ⓘ
- butter or margarine ⓘ
- cracker crumbs ⓘ
- 1/4 cup Mozzarella cheese ⓘ
- 1/4 cup Swiss cheese ⓘ
Instructions
- Saute onion, green pepper, and celery in butter.
- Add a small amount of water to prevent drying.
- Add crab meat and cook until hot.
- Transfer mixture to a mixing bowl and add egg, mustard, ketchup, Tabasco, salt, and pepper to taste.
- Add Mozzarella and sharp cheese to the mixture.
- Add cracker crumbs until the mixture is cohesive enough to hold together.
- Toast half of an English muffin and place it on a cookie sheet or pie tin.
- Build the crab mixture into a mound on top of the toasted muffin.
- Top with a slice of Swiss cheese.
- Broil until the cheese melts and is bubbly.
