Ingredients

  • 1 medium onion, chopped
  • 1/2 green pepper, chopped
  • 2 large stalks celery, chopped
  • 1 egg
  • 1 tsp. Grey Poupon mustard
  • 1 Tbsp. ketchup
  • dash of Tabasco sauce
  • 1 lb. crab meat
  • Old Bay seasoned bread crumbs
  • salt and pepper
  • butter or margarine
  • cracker crumbs
  • 1/4 cup Mozzarella cheese
  • 1/4 cup Swiss cheese

Instructions

  1. Saute onion, green pepper, and celery in butter.
  2. Add a small amount of water to prevent drying.
  3. Add crab meat and cook until hot.
  4. Transfer mixture to a mixing bowl and add egg, mustard, ketchup, Tabasco, salt, and pepper to taste.
  5. Add Mozzarella and sharp cheese to the mixture.
  6. Add cracker crumbs until the mixture is cohesive enough to hold together.
  7. Toast half of an English muffin and place it on a cookie sheet or pie tin.
  8. Build the crab mixture into a mound on top of the toasted muffin.
  9. Top with a slice of Swiss cheese.
  10. Broil until the cheese melts and is bubbly.
