Ingredients

  • 2 tsp. olive oil
  • 1 clove garlic
  • 1/4 lb. sliced mushrooms
  • 1/2 c. sliced parsley
  • 1/4 c. golden raisins
  • 1/4 c. bread crumbs
  • 3 Tbsp. grated Parmesan
  • 1 lb. scaloppine
  • 1 c. chicken broth
  • 1 chopped carrot
  • 1 (14 oz.) can stewed tomatoes

Instructions

  1. Heat 1 teaspoon olive oil in a large pan over medium heat.
  2. Add garlic and sauté for 30 seconds.
  3. Add sliced mushrooms and sauté for 3 minutes.
  4. Remove from heat.
  5. Stir in sliced parsley, golden raisins, bread crumbs, and grated Parmesan.
  6. Lay scaloppine flat on a surface.
  7. Spread about 1/3 cup of stuffing over each scaloppine.
  8. Roll up each scaloppine and secure with a toothpick.
  9. Wipe the skillet clean.
  10. Saute the rolls in the remaining oil in the skillet for 5 minutes until browned.
  11. Add chicken broth and chopped carrot, then simmer for 15 minutes.
  12. Remove the rolls to a plate and keep warm.
  13. Remove toothpicks from the rolls.
  14. Stir stewed tomatoes into the skillet and boil rapidly for 5 minutes until slightly thickened.
  15. Add the rolls back to the skillet and heat through.
