Ingredients

  • 4 (10 to 12 inch) flour tortillas
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp. oil
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced green bell pepper
  • 2 (16 oz.) cans black beans, rinsed and drained
  • 3/4 cup salsa
  • 1 1/2 tsp. ground cumin
  • 2 cups shredded cheese

Instructions

  1. Wrap tortillas in foil and bake at 350°F for about 12 minutes or until heated through.
  2. In a 10-inch skillet, cook chopped onion and minced garlic in oil for 5 minutes or until softened, stirring occasionally.
  3. Add diced red and green bell peppers; cook for 2 minutes.
  4. Partially mash one can of black beans with a wooden spoon or potato masher.
  5. Add the mashed beans, remaining can of beans, salsa, and cumin to the skillet; cook over low heat for 10 minutes, stirring occasionally.
  6. Sprinkle 1/2 cup shredded cheese down the center of each warmed tortilla.
  7. Spoon the bean mixture over the cheese.
  8. Top with chopped cilantro, if desired, then roll up to serve.
