Ingredients

  • 1 cup oil
  • 1.5 cups sugar
  • 3 eggs
  • 3 tablespoons hot water
  • 1 cup grated raw carrots
  • 1 cup grated raw beets
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/2 cup nuts

Instructions

  1. Beat together oil, sugar, egg yolks, and hot water until well combined.
  2. Add grated raw carrots and beets to the mixture.
  3. Sift together flour, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture, mixing until smooth.
  5. In a separate bowl, beat egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the batter.
  7. Stir in vanilla extract and nuts.
  8. Pour the batter into a greased and floured pan.
  9. Bake at 350°F for about 35 minutes or until a toothpick inserted in the center comes out clean.
