Tips & Substitutions

For a vibrant Vegetable Primavera, consider adding bell peppers or asparagus for extra color and flavor. You can substitute fresh herbs with dried ones if necessary, but use less as dried herbs are more potent. If you like a bit of spice, a pinch of red pepper flakes can elevate the dish. This recipe is also great for using up leftover vegetables from your fridge.

Serving Suggestions

Serve the Vegetable Primavera warm as a main dish or a side. It pairs beautifully with Mediterranean recipes like Eggplant With Herbs or a refreshing Vegetable Salad - Marinated. A sprinkle of grated Parmesan cheese can enhance the flavors, and serving it over a bed of quinoa or bulgur adds a nice texture.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days. To reheat, gently warm on the stovetop over low heat, adding a splash of water to prevent drying out. Alternatively, you can microwave it in short intervals, stirring in between until heated through.
