Ingredients

  • 6 c. vegetable broth
  • 2 c. dried split peas, rinsed
  • 1 medium onion, chopped
  • 1 c. carrots, chopped
  • 2 celery ribs, chopped
  • 2 garlic cloves, minced
  • 1/2 tsp. dried marjoram
  • 1/2 tsp. dried basil
  • 1/4 tsp. cumin
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. In a large saucepan, combine vegetable broth, dried split peas, chopped onion, chopped carrots, chopped celery, minced garlic, dried marjoram, dried basil, cumin, salt, and pepper; bring to a boil.
  2. Reduce heat; cover and simmer for one hour or until peas are tender, stirring occasionally.
  3. Add salt and pepper to taste.
  4. Simmer for an additional 10 minutes.
  5. In small batches, puree the soup in a blender until smooth.
  6. Return the pureed soup to the pan and heat for 5 minutes.
  7. Garnish with shredded carrots before serving.
