Ingredients

  • minced garlic
  • Parmesan cheese
  • mushrooms (fresh, washed, bite-size pieces, optional)
  • broccoli (fresh, washed, bite-size pieces, optional)
  • carrots (fresh, washed, bite-size pieces, optional)
  • zucchini (fresh, washed, bite-size pieces, optional)
  • 14.5 oz canned diced tomatoes
  • 1 jar basil pesto
  • 1 pt heavy whipping cream
  • olive oil
  • 1 box bow tie pasta

Instructions

  1. Put veggies in a large skillet with a very small amount of olive oil (1 tablespoon). Cook on medium heat (covered) until veggies are tender, about 10 minutes.
  2. Add 2 or 3 tablespoons of basil pesto; add diced tomatoes and cook on medium for about 8 minutes.
  3. Add 1/2 tablespoon minced garlic and cook for 1 minute.
  4. Add heavy whipping cream and cook on medium heat just long enough to heat the cream thoroughly.
  5. Serve over cooked bow tie pasta.
