Ingredients

  • 1 refrigerated 9-inch pie crust
  • 6 oz. shredded part skim mozzarella cheese
  • 4 oz. crumbled turkey sausage
  • 1/4 cup chopped mushrooms
  • 1 tablespoon chopped onion
  • 1 tablespoon chopped green pepper
  • 4 large eggs
  • 3/4 cup low-fat milk
  • 1/2 teaspoon salt
  • dash black pepper

Instructions

  1. Preheat oven to 425°F.
  2. Bake the refrigerated pie crust according to package directions for a prebaked shell. Cool completely.
  3. Reduce oven temperature to 375°F.
  4. Place half of the shredded mozzarella cheese in the baked pie crust.
  5. Top with cooked turkey sausage, chopped onion, and chopped green pepper.
  6. Sprinkle the remaining mozzarella cheese over the top.
  7. In a medium bowl, whisk together the eggs, low-fat milk, salt, and black pepper.
  8. Pour the egg mixture over the filled pie shell.
  9. Bake at 450°F until a knife inserted in the center comes out clean.
