Ingredients

  • 5 Tbsp. oil
  • 3 tsp. cornstarch
  • 2 chicken bouillon cubes
  • 1 medium onion
  • 1/2 lb. broccoli
  • 5 tsp. soy sauce
  • 2 chicken breasts
  • 1/2 tsp. ground ginger
  • 1 clove garlic
  • 1/2 cup chopped walnuts
  • hot cooked rice

Instructions

  1. In a bowl, mix together 1 tablespoon oil, 2 teaspoons soy sauce, and 1 teaspoon cornstarch.
  2. Cut chicken into bite-sized pieces and stir into the mixture to coat. Cover and refrigerate for 30 minutes.
  3. In a wok or large skillet, heat 5 tablespoons oil over medium-high heat.
  4. Add diced onion and cook until translucent.
  5. Add minced garlic and ground ginger, cook for 1 minute.
  6. Add chicken pieces and cook until browned and cooked through.
  7. Stir in dissolved chicken bouillon, chopped broccoli, and remaining soy sauce.
  8. Cook until broccoli is tender-crisp.
  9. Stir in chopped walnuts and cook for another 2 minutes.
  10. Serve hot over hot cooked rice.
