Ingredients

  • 2 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 1/2 cups confectioners sugar
  • 1/2 cup softened butter
  • 1/4 cup vegetable oil
  • 1/4 cup fresh orange juice
  • 4 eggs
  • 1 teaspoon vanilla
  • 2 cups grated butternut squash
  • 1/2 cup chopped walnuts

Instructions

  1. Combine dry ingredients; set aside.
  2. Combine wet ingredients; mix well.
  3. Add grated butternut squash and chopped walnuts to the wet mixture.
  4. Add the dry ingredients to the wet mixture and mix until combined.
  5. Pour batter into a greased 9 x 13-inch pan.
  6. Bake at 350°F (175°C) until a knife inserted in the center comes out clean, about 35 minutes.
  7. Allow to cool slightly, then top with cream cheese frosting before serving.
