Ingredients

  • 1 lb. Great Northern beans
  • 8 c. water
  • 1/2 lb. salt pork
  • 3 onions
  • 16 oz. can chopped tomatoes
  • 1/4 tsp. sage
  • 1 tsp. parsley
  • 2 bouillon cubes
  • 1 bay leaf
  • 1 large garlic
  • 3 Tbsp. oil
  • 1/2 tsp. thyme

Instructions

  1. Soak the Great Northern beans in water overnight.
  2. Keep 3 cups of the soaking liquid and set aside.
  3. Add bouillon cubes to the reserved liquid and dissolve.
  4. Rinse the salt pork, dry, and cut into 1-inch strips.
  5. Brown the pork strips in oil until crispy.
  6. Add the soaked beans, chopped onions, chopped garlic, chopped tomatoes, sage, parsley, thyme, bay leaf, and the prepared bouillon liquid to the pot.
  7. Bring to a boil, then cover and simmer for 2 to 2 1/2 hours, or until the beans are tender.
  8. Optional: cook in a crock-pot on low for several hours.
