Ingredients

  • 1 diced onion
  • 1 to 2 cloves garlic, crushed
  • 1 bay leaf
  • 1 to 2 Tbsp. basil
  • 1 to 2 Tbsp. curry powder
  • 2 to 3 qt. stock or water
  • 1 cup mung beans
  • 1 cup split peas
  • 1 cup limas
  • 1 grated carrot
  • 1 diced potato
  • 2 Tbsp. tamari or soy sauce

Instructions

  1. Combine the stock or water, mung beans, split peas, limas, grated carrot, diced potato, and tamari or soy sauce in a soup pot; bring to a boil and cook for 10 minutes.
  2. Meanwhile, sauté the diced onion, crushed garlic, bay leaf, basil, and curry powder in a separate pan until the onion is clear.
  3. Add the sautéed mixture to the soup pot.
  4. Simmer the soup for 1 1/2 hours.
  5. Serve the soup over toasted French bread.
