Ingredients

  • 8 slices white bread
  • 3 eggs
  • 2 1/2 cups milk
  • 16 oz. can pumpkin (solid pack)
  • 3/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon vanilla
  • 3/4 cup raisins
  • Stirred cream (optional)

Instructions

  1. Preheat oven to 375°F.
  2. In a 2-quart casserole, crumble the white bread.
  3. In a bowl, combine eggs, milk, pumpkin, sugar, cinnamon, nutmeg, and vanilla.
  4. Add raisins to the egg mixture.
  5. Pour the egg mixture over the crumbled bread and stir to combine.
  6. Set the casserole in a larger casserole or baking dish.
  7. Fill the larger dish with hot water to create a water bath.
  8. Bake for 70 minutes or until a knife inserted near the center comes out clean.
  9. Serve warm or chilled with stirred cream if desired.
