- Brown the ground beef and onion in oil.
- Add the uncooked instant rice and seasonings (oregano, salt, pepper).
- Stir for a few minutes and drain off excess grease.
- Layer in a 9 x 13-inch casserole dish: half the sliced zucchini, all of the meat mixture, cottage cheese, remaining zucchini, cream of mushroom soup, and shredded Cheddar cheese.
- Bake at 350°F (175°C) for 40 minutes or longer until hot and bubbly.
