Ingredients

  • 1 lb. ground beef
  • 1 onion
  • 2 c. cottage cheese
  • 1/2 tsp. oregano
  • 1 (10 1/2 oz.) can cream of mushroom soup, undiluted
  • 1 c. sharp Cheddar cheese, shredded
  • 4 c. sliced zucchini
  • 1 c. uncooked instant rice
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 Tbsp. oil

Instructions

  1. Brown the ground beef and onion in oil.
  2. Add the uncooked instant rice and seasonings (oregano, salt, pepper).
  3. Stir for a few minutes and drain off excess grease.
  4. Layer in a 9 x 13-inch casserole dish: half the sliced zucchini, all of the meat mixture, cottage cheese, remaining zucchini, cream of mushroom soup, and shredded Cheddar cheese.
  5. Bake at 350°F (175°C) for 40 minutes or longer until hot and bubbly.
