Ingredients

  • pastry crust
  • 1/2 lb hamburger
  • 1 Tbsp minced onion
  • 1 tsp chopped parsley
  • 1/2 tsp garlic salt
  • 1 tsp salt
  • 1 tsp oregano
  • 1/2 cup dry bread crumbs
  • 1/4 cup Parmesan cheese
  • 1/2 cup chopped green pepper
  • 4 medium zucchini, sliced
  • 2 tomatoes, peeled and sliced

Instructions

  1. Brown the hamburger with minced onion and seasonings including parsley, garlic salt, salt, and oregano.
  2. Add dry bread crumbs, Parmesan cheese, and chopped green pepper to the meat mixture and mix well.
  3. Line a large, deep pie pan with pastry crust.
  4. Layer half of the sliced zucchini in the pie shell.
  5. Top the zucchini layer with half of the meat mixture.
  6. Repeat the layers with the remaining zucchini and meat mixture.
  7. Place peeled and sliced tomatoes on top of the layered filling, adding a bit of tomato juice if the tomatoes are not juicy and ripe.
  8. Cover the pie with a pastry crust, cut a small hole in the center, and dust with pepper.
  9. Bake in a preheated oven at 350°F (175°C) for one hour.
