Ingredients

  • 3 eggs
  • 3 c. flour
  • 3 tsp. vanilla
  • 1 tsp. salt
  • 1 tsp. soda
  • 1 c. chopped nuts
  • 1/4 tsp. baking powder
  • 1 c. oil
  • 2 1/2 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 2 c. peeled, grated zucchini

Instructions

  1. Beat eggs, then add oil, sugar, zucchini, and vanilla. Mix well.
  2. Add remaining ingredients and mix until well blended.
  3. Bake in greased loaf pans for 1 hour at 325°F.
