Zucchini Spice Loaf
Ingredients
- 1 cup whole wheat flour ⓘ
- 1 1/2 teaspoons baking powder ⓘ
- 1/2 teaspoon cinnamon ⓘ
- 1/4 teaspoon allspice ⓘ
- 1/4 teaspoon ground cloves ⓘ
- 1/2 teaspoon powdered ginger ⓘ
- 1/4 teaspoon salt ⓘ
- 1/3 cup raisins
- 3 tablespoons walnuts, chopped ⓘ
- 1/3 cup sunflower oil ⓘ
- 4 tablespoons orange juice, fresh ⓘ
- 2 tablespoons honey ⓘ
- 1 egg, free range ⓘ
- 1 cup zucchini, finely grated ⓘ
Instructions
- Preheat oven to 180 degrees Celcius.
- In one bowl combine the flour, baking powder, spices, salt, raisin and walnuts.
- In another bowl mix the oil, orange juice, honey, egg and zucchini. Combine the wet ingredients through the dry until well combined.
- Bake in a lined or oiled loaf tin for 35 - 40 minutes. Turn the loaf out onto a wire rack and allow to cool completely before slicing.
