Ingredients

  • 1/2 cup butter
  • 1/2 cup shortening
  • 2 cups sugar
  • 3/4 cup molasses
  • 1 cup blackberry jam
  • 5 eggs
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 cup buttermilk
  • 1 cup chopped nuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together butter, shortening, and sugar until well combined.
  3. Add molasses and blackberry jam to the mixture and mix thoroughly.
  4. Separate the eggs, placing yolks and whites in separate bowls.
  5. Beat the egg yolks into the butter mixture one at a time.
  6. Sift together the dry ingredients: flour, soda, baking powder, cinnamon, nutmeg, and cloves.
  7. Gradually add the dry ingredients and buttermilk to the wet mixture, mixing after each addition.
  8. Beat the egg whites until stiff peaks form.
  9. Fold the beaten egg whites into the batter gently until combined.
  10. Pour the batter into a greased baking pan and bake for approximately 40 minutes or until a toothpick inserted in the center comes out clean.
