  • 2 Tbsp. butter
  • 2 Tbsp. chopped fresh parsley

Instructions

  1. Combine lemon juice, Dijon mustard, chopped garlic, and pepper in a bowl.
  2. Beat in 5 tablespoons of olive oil. Add chicken breasts, skinned, boned, and cut in half, and marinate for 1 hour at room temperature.
  3. In a large skillet, sauté sliced almonds in 1/2 tablespoon of olive oil until golden. Remove and reserve.
  4. Wipe out the pan.
  5. Drain the chicken and reserve the marinade.
  6. Cook the chicken over high heat in the remaining 1 tablespoon of olive oil until brown on each side, about 6 to 10 minutes, until just tender.
  7. Remove the chicken from the pan.
  8. Strain the marinade into the pan.
  9. Add chicken broth and the dissolved cornstarch mixture to the pan.
  10. Cook over high heat, stirring occasionally, until the sauce reduces by half, about 5 minutes.
  11. Add marmalade and stir over medium heat until melted.
  12. Stir in butter, chopped parsley, and red pepper.
  13. Return the chicken to the pan, heat through, then add toasted almonds before serving.
