Americana Casserole

- Melt 2 tablespoons butter in a skillet.
- Add chopped onion and lean ground beef; sauté until beef is thoroughly browned.
- Drain off drippings and reserve the meat mixture.
- Melt the remaining 1/4 cup butter over low heat in a saucepan.
- Stir in flour, salt, and pepper; cook until smooth, stirring constantly.
- Remove from heat and gradually stir in milk.
- Bring to a boil over medium heat, stirring constantly, and boil for 1 minute.
- Add 1 cup shredded Cheddar cheese and Worcestershire sauce; stir until cheese melts.
- Add frozen peas and carrots and the reserved meat mixture; stir to combine.
- Turn the mixture into a 1½-quart casserole dish.
- Bake at 375°F for 25 minutes until heated through and bubbly.
