Ingredients

  • 6 Tbsp. butter
  • 1/2 cup chopped onion
  • 1 lb. lean ground beef
  • 1/4 cup flour
  • 1/2 tsp. salt
  • dash of pepper
  • 1½ cups milk
  • 1½ cups shredded Cheddar cheese
  • 1/2 tsp. Worcestershire sauce
  • 10 oz. frozen peas and carrots
  • 2 cups mashed or instant potatoes

Instructions

  1. Melt 2 tablespoons butter in a skillet.
  2. Add chopped onion and lean ground beef; sauté until beef is thoroughly browned.
  3. Drain off drippings and reserve the meat mixture.
  4. Melt the remaining 1/4 cup butter over low heat in a saucepan.
  5. Stir in flour, salt, and pepper; cook until smooth, stirring constantly.
  6. Remove from heat and gradually stir in milk.
  7. Bring to a boil over medium heat, stirring constantly, and boil for 1 minute.
  8. Add 1 cup shredded Cheddar cheese and Worcestershire sauce; stir until cheese melts.
  9. Add frozen peas and carrots and the reserved meat mixture; stir to combine.
  10. Turn the mixture into a 1½-quart casserole dish.
  11. Bake at 375°F for 25 minutes until heated through and bubbly.
