Ingredients

  • 1 chuck roast
  • 2 tsp. ground hot pepper
  • 1/2 tsp. salt
  • 2 tsp. black pepper
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. butter
  • 1 medium chopped onion
  • 1/4 cup chopped celery
  • 1 chopped green pepper
  • 2 cloves chopped garlic
  • 1 Tbsp. flour
  • 1 cup tomato sauce
  • 1 cup beef broth
  • 1 can whole tomatoes, undrained
  • 1/2 tsp. thyme
  • 1 bay leaf

Instructions

  1. Pat the chuck roast dry with paper towels.
  2. Rub the roast with ground hot pepper and salt.
  3. Heat vegetable oil in a pot over moderate heat and brown the roast on all sides.
  4. Transfer the browned meat to a plate and pour off excess fat from the pot.
  5. Add butter to the pot and heat until melted.
  6. Add chopped onion, celery, green pepper, and chopped garlic; cook until the onion is golden.
  7. Stir flour into the pot and cook for 2 minutes.
  8. Add tomato sauce, beef broth, undrained whole tomatoes, thyme, and bay leaf to the pot.
  9. Return the meat to the pot, bring to a boil, then lower to a simmer.
  10. Cover and cook for 3 hours or until the meat is tender.
