Ingredients

  • 6 oz. can crab meat, rinsed, drained and cartilage removed
  • 1/2 cup shredded carrot
  • 1/2 cup finely shredded Monterey Jack cheese
  • 2 tablespoons sliced green onion
  • 1 teaspoon all-purpose flour
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 scallop shells or ramekins (4-inch)
  • 1/4 cup half and half
  • 1 egg

Instructions

  1. In a small mixing bowl, combine crab meat, shredded carrot, shredded Monterey Jack cheese, sliced green onion, all-purpose flour, ground nutmeg, salt, and pepper.
  2. Spoon one-quarter of the mixture into each scallop shell or ramekin.
  3. Arrange the filled shells on a serving platter.
  4. Set aside and serve.
