  • salt and freshly ground pepper to taste
  • 2 tsp. chopped fresh oregano
  • 1 tsp. dried oregano
  • 1 Tbsp. finely chopped garlic
  • 1/4 lb. boneless smoked ham, cubed
  • 4 ripe plum tomatoes, peeled and diced
  • 3 c. chicken broth
  • 12 green olives stuffed with pimentos

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt, pepper, cumin, and oregano.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Add chicken pieces and brown on all sides.
  5. Remove chicken pieces and place them in a baking dish, keeping warm.
  6. In the same skillet, add chopped onion, green pepper, garlic, and ham; cook until vegetables are tender.
  7. Add crushed tomatoes, saffron threads, bay leaf, and cooked mixture; simmer for a few minutes.
  8. Stir in rice, capers, pimentos, green peas, and chicken broth.
  9. Place browned chicken pieces on top of the rice mixture.
  10. Cover and bake for about 45 minutes or until rice is tender and chicken is cooked through.
  11. Remove from oven, discard bay leaf, and garnish with stuffed olives and grated Parmesan cheese before serving.
