Ingredients

  • 2 lb. round steak or chuck roast
  • 1/4 lb. bacon
  • 1 large onion
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 tsp. marjoram
  • 1 clove garlic
  • 3/4 c. dry wine (Chablis or other)
  • 5 or 6 medium potatoes
  • 2 parsnips (optional)
  • several stalks celery
  • 3 or 4 carrots
  • 2 c. beef broth
  • 1 Tbsp. flour

Instructions

  1. Cut the meat into small chunks.
  2. Cut up the bacon and fry it with diced onion until browned.
  3. Add the meat to the bacon and onion mixture; brown it well.
  4. Add salt, pepper, marjoram, crushed garlic, and wine to the pot.
  5. Bring the mixture to a boil, then lower the heat, cover, and simmer for an hour.
