Instructions

  1. Saute onions and green pepper in margarine until tender.
  2. Add diced tomatoes, drained mushrooms, sliced olives, and oregano; simmer for 10 minutes.
  3. Optional: add cooked and drained ground beef to the mixture.
  4. Place half of the cooked spaghetti in a greased 13 x 9 x 2-inch baking dish.
  5. Top with half of the tomato mixture.
  6. Sprinkle with 1 cup of grated Cheddar cheese.
  7. Repeat layers with remaining spaghetti, tomato mixture, and cheese.
  8. Mix the cream of mushroom soup with water and pour over the casserole.
  9. Sprinkle with Parmesan cheese.
  10. Bake uncovered at 350°F for 30 to 35 minutes or until heated through.
