Ingredients

  • 8 oz. bulk pork sausage
  • 2 cups cornmeal
  • 1/2 cup all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 small can chili pepper
  • 1 large onion
  • 1 (11 oz.) can Mexican style corn
  • 2 cups buttermilk
  • 1/2 cup shredded Cheddar cheese

Instructions

  1. In a deep 10-inch iron skillet, fry the sausage until done and crumble.
  2. Reserve 2 to 3 tablespoons of drippings from the sausage.
  3. Combine cornmeal, flour, baking powder, baking soda, and salt in a mixing bowl.
  4. Add the beaten eggs, buttermilk, chopped onion, drained Mexican-style corn, chopped chili pepper, cooked sausage, and shredded Cheddar cheese to the dry ingredients.
  5. Mix until just combined.
  6. Pour the batter into the skillet with the reserved sausage drippings.
  7. Bake in a preheated oven at 375°F (190°C) for about 30 minutes or until golden brown.
  8. Serve warm, sliced, and enjoy.
