Ingredients

  • 2/3 cup honey
  • 1 1/2 cups mashed bananas
  • 1/3 cup shortening
  • 2 eggs
  • 1 teaspoon salt
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 1/2 cups uncooked oatmeal
  • 1/2 cup chopped walnuts
  • 1 cup raisins

Instructions

  1. Preheat oven to 350°F.
  2. Cream shortening, mashed bananas, honey, and eggs together.
  3. Sift together salt, flour, cinnamon, nutmeg, baking powder, and baking soda; stir into banana mixture.
  4. Blend in uncooked oatmeal, chopped walnuts, and raisins.
  5. Pour batter into a well-greased loaf pan.
  6. Bake at 350°F for 55 to 60 minutes or until a toothpick inserted in the center comes out clean.
