Ingredients

  • 3 cups all-purpose flour

  • 1/4 teaspoon baking soda
  • 3 tablespoons chilled margarine or butter
  • 1/4 cup low-fat buttermilk
  • 1 teaspoon vanilla extract
  • 1 large egg or 2 large egg whites
  • 1 cup mashed, ripe banana
  • Cooking spray
  • 1/3 cup walnuts, coarsely chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, combine all-purpose flour, brown sugar, baking powder, salt, and baking soda.
  3. Cut in the chilled margarine or butter until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together buttermilk, vanilla extract, and egg or egg whites.
  5. Stir the wet ingredients into the dry ingredients until just combined.
  6. Fold in the mashed bananas and chopped walnuts.
  7. Turn the dough onto a lightly floured surface and gently knead a few times.
  8. Pat the dough into a 1-inch thick circle and cut into wedges or use a biscuit cutter to form individual scones.
  9. Place scones on a baking sheet coated with cooking spray.
  10. Bake for 15 minutes or until golden brown and cooked through.
  11. Remove from oven and let cool slightly before serving.
