Ingredients

  • 10 oz. coarsely chopped sausage
  • 1 c. chopped onion
  • 3 Tbsp. softened butter
  • 1 c. sour cream
  • 3 eggs
  • 1 c. cornmeal
  • 3/4 c. all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 c. grated sharp Cheddar cheese
  • 1 1/4 c. cooked corn

Instructions

  1. In a heavy skillet, fry the sausage until lightly browned and all fat has been rendered.
  2. Remove the sausage to drain on paper towels.
  3. In 1 tablespoon of remaining fat, sauté the chopped onion until lightly browned.
  4. Set aside the cooked sausage and sautéed onion.
  5. In a mixing bowl, combine cornmeal, all-purpose flour, baking soda, baking powder, and salt.
  6. Add eggs, sour cream, milk, and softened butter; mix until just combined.
  7. Fold in the cooked sausage, sautéed onion, grated Cheddar cheese, and cooked corn.
  8. Pour the batter into a greased baking dish.
  9. Bake at 375°F (190°C) for about 30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  10. Allow to cool slightly before serving.
