Ingredients

  • 1 lb. chuck, flank or round steak
  • 1/2 tsp. ginger
  • 1/2 tsp. garlic powder
  • 1/2 tsp. ground black pepper
  • 2 Tbsp. brown sugar
  • 2 Tbsp. soy sauce
  • 2 Tbsp. lemon juice
  • 1 large pepper, sliced
  • 1 large carrot, sliced
  • 1 1/4 cups chicken broth
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. cornstarch
  • 2 cans chow mein vegetables
  • 1 cup chow mein noodles
  • 2 onions, sliced
  • hot cooked rice
  • 2 celery stalks, cut in large pieces

Instructions

  1. Cut the steak into 1/4-inch strips and place in a shallow dish.
  2. Combine ginger, garlic powder, black pepper, and brown sugar in a bowl.
  3. Add soy sauce, lemon juice, and 1 cup chicken broth; mix well.
  4. Pour the marinade over the meat and refrigerate for 2 to 3 hours.
  5. In a large skillet or wok, melt butter over medium-high heat.
  6. Add marinated beef strips and cook until browned, about 5-7 minutes.
  7. Add sliced onions, large sliced peppers, large sliced carrots, and celery stalks; stir-fry until vegetables are tender-crisp.
  8. In a small bowl, mix cornstarch with remaining chicken broth to make a slurry.
  9. Stir the slurry into the skillet to thicken the sauce.
  10. Add chow mein vegetables and cook for another 2 minutes.
  11. Cook chow mein noodles according to package instructions.
  12. Serve beef and vegetables over hot cooked rice, topped with noodles.
