Ingredients

  • 2 cups plain flour
  • 1/2 teaspoon salt
  • 1 cup nuts, chopped
  • 1/2 teaspoon baking soda
  • 1 cup raw cranberries, cut
  • 1 1/2 teaspoons baking powder
  • 1 cup sugar
  • 1/2 cup orange juice
  • 2 tablespoons butter
  • 1 egg
  • 1/2 cup boiling water

Instructions

  1. Place the butter in a cup.
  2. Add boiling water to the butter to make 1/4 cup.
  3. Add fresh orange juice to the mixture to make 3/4 cup total.
  4. In a bowl, beat the egg and add it to the dry ingredients.
  5. Pour the liquid mixture into the dry ingredients and mix to blend.
  6. Add chopped nuts and cut cranberries to the batter.
  7. Pour the batter into a greased and floured bread pan.
  8. Bake for 1 hour at 325°F (160°C).
