Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup shortening
  • 3 eggs
  • 1 teaspoon allspice
  • 2 teaspoons cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon nutmeg
  • 1 1/2 teaspoons cocoa
  • 1/2 teaspoon salt
  • 2 1/2 cups self-rising flour
  • 1 1/4 teaspoons soda
  • 1 1/2 cups buttermilk
  • 1 teaspoon vanilla
  • 1 cup blackberry jam
  • 1/2 cup cherry preserves
  • 1/2 cup applesauce
  • 1 cup raisins
  • 1 cup pecans, chopped

Instructions

  1. Cream sugar and shortening until light and fluffy.
  2. Add eggs one at a time, beating well after each addition.
  3. In a separate bowl, measure spices and salt, then add to the self-rising flour.
  4. Dissolve soda in buttermilk.
  5. Alternately add the flour mixture and buttermilk soda mixture to the creamed mixture, beginning and ending with the flour.
  6. Mix in vanilla.
  7. Gradually blend in blackberry jam, cherry preserves, applesauce, raisins, and chopped pecans until well combined.
  8. Pour batter evenly into three greased nine-inch pans.
  9. Bake at 350°F (175°C) for 30 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow cakes to cool slightly, then frost with caramel frosting.
