- 3 eggs ⓘ

- 1 teaspoon nutmeg ⓘ
- 1 1/2 teaspoons cocoa ⓘ
- 1/2 teaspoon salt ⓘ
- 2 1/2 cups self-rising flour
- 1 1/4 teaspoons soda ⓘ
- 1 1/2 cups buttermilk ⓘ
- 1 teaspoon vanilla ⓘ
- 1 cup blackberry jam ⓘ
- 1/2 cup cherry preserves ⓘ
- 1/2 cup applesauce ⓘ
- 1 cup raisins
- 1 cup pecans, chopped ⓘ
Instructions
- Cream sugar and shortening until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- In a separate bowl, measure spices and salt, then add to the self-rising flour.
- Dissolve soda in buttermilk.
- Alternately add the flour mixture and buttermilk soda mixture to the creamed mixture, beginning and ending with the flour.
- Mix in vanilla.
- Gradually blend in blackberry jam, cherry preserves, applesauce, raisins, and chopped pecans until well combined.
- Pour batter evenly into three greased nine-inch pans.
- Bake at 350°F (175°C) for 30 minutes or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool slightly, then frost with caramel frosting.
