Ingredients

  • 1 1/2 to 2 lb. sirloin steak
  • 2 large onions
  • 1 cup red wine vinegar
  • 1/2 cup vegetable oil
  • 1/3 cup brown sugar
  • 1 clove garlic
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried whole marjoram
  • 1/4 teaspoon dried whole rosemary
  • 3 drops hot sauce
  • 1 tablespoon plus 1 teaspoon coarsely ground pepper
  • tomato wedges
  • fresh parsley sprigs

Instructions

  1. Place the steak in a large shallow dish.
  2. Combine sliced onions, red wine vinegar, vegetable oil, brown sugar, minced garlic, salt, marjoram, crushed rosemary, and hot sauce; pour over the steak.
  3. Cover and refrigerate for 3 hours, turning occasionally.
  4. Remove the steak from the marinade.
  5. Press 2 teaspoons of coarsely ground pepper onto each side of the steak.
  6. Grill over hot coals for 15 minutes on each side or until desired doneness.
  7. Place the steak on a serving platter and garnish with tomato wedges and fresh parsley.
  8. To serve, cut into serving pieces.
