Blue Ribbon Split Pea Soup

Ingredients
- 2 Tbsp. butter ⓘ
- 1 Tbsp. safflower oil ⓘ
- 1 c. carrots, coarsely chopped ⓘ
- 1 c. celery, coarsely chopped ⓘ
- 1 1/2 c. onion, coarsely chopped
- 1 large clove garlic, minced ⓘ
- 2 c. cabbage, finely shredded ⓘ
- 10 c. water ⓘ
- 2 c. green split peas ⓘ
- 1 tsp. dried basil ⓘ
- 1 tsp. dried thyme ⓘ
- 1 tsp. dried marjoram ⓘ
- 1/2 tsp. dried oregano ⓘ
- 1/8 tsp. dried tarragon ⓘ
- 1/4 tsp. celery seed ⓘ
- 1/4 tsp. ground coriander ⓘ
- 1/2 tsp. sea salt or 1/4 tsp. seasoned salt or 1/4 tsp. salt-free seasoning ⓘ
- fresh pepper to taste ⓘ
- 1 Tbsp. vegetable bouillon ⓘ
Instructions
- Heat the butter and safflower oil together in a large soup kettle.
- Add the carrots, celery, onion, garlic, and cabbage. Saute, stirring frequently, for several minutes.
- Add the water, split peas, seasonings, and bouillon. Bring to a boil.
- Cover and simmer over medium heat for 1 hour and 30 minutes, stirring frequently.
- Stir in the parsley and adjust the seasonings as needed.
