Ingredients
- 4 to 6 chicken thighs and legs ⓘ
- 1 c. dry beans ⓘ
- 1 can sliced beets ⓘ
- 1/4 c. margarine ⓘ
- 1 large green pepper ⓘ
- 1 large onion ⓘ
- 1 large carrot ⓘ
- 1/2 head cabbage ⓘ
- 5 to 7 potatoes ⓘ
- 1/2 bunch fresh parsley ⓘ
- 2 cloves garlic ⓘ
- salt ⓘ
- 1 c. tomato juice ⓘ
- 3 bay leaves ⓘ
- sour cream or mayo (optional) ⓘ
Instructions
- Fill a large pot with hot water.
- Add chicken and dry beans. Pour in beet juice from the can.
- Cut beets into narrow strips and add to the pot before it boils.
- Bring to a boil and cook for 1 hour.
