Ingredients

  • 1 1/2 lb. boneless chicken breasts
  • 1 1/2 cups flour
  • salt and pepper
  • olive oil
  • 1 1/2 cups chicken stock
  • 1 Tbsp. Dijon mustard
  • 3 Tbsp. butter
  • 8 oz. goat cheese

Instructions

  1. Dredge each chicken breast in the seasoned flour, shaking off excess.
  2. Fry the chicken in olive oil until golden brown.
  3. Keep the chicken warm in a 250°F oven while preparing the sauce.
  4. In a saucepan, combine chicken stock and Dijon mustard, bringing to a simmer.
  5. Stir in butter and goat cheese until melted and smooth.
  6. Add roasted red peppers and cook until heated through.
  7. Serve the sauce over the fried chicken breasts.
