Ingredients

  • 5 slices day old bread, cubed
  • 1 egg, beaten
  • 1 Tbsp. melted butter
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. grated onion
  • 1/8 tsp. poultry seasoning
  • 4 pork chops, 1 inch thick
  • 4 medium apples
  • 1/4 cup seedless raisins
  • 4 Tbsp. sugar
  • 1/4 tsp. cinnamon
  • 4 medium sweet potatoes

Instructions

  1. Combine bread cubes, beaten egg, melted butter, salt, pepper, grated onion, and poultry seasoning in a bowl.
  2. Shape the mixture into four balls.
  3. Place pork chops in a shallow baking pan.
  4. Sprinkle the chops with salt and pepper.
  5. Place one stuffing ball on each pork chop.
  6. Core the apples and fill the centers with a mixture of raisins, sugar, and cinnamon.
  7. Set the apples in the pan with the pork chops.
  8. Roll the sweet potatoes in melted butter.
  9. Place the sweet potatoes in the pan with the pork chops and apples.
  10. Sprinkle the sweet potatoes with salt and pepper.
  11. Bake in a 350°F (175°C) oven for 1 1/2 hours.
