Ingredients

  • 2 c. chicken broth
  • 1 c. brown rice
  • 1/2 c. grated raw carrot
  • 1/2 c. finely chopped celery
  • 1/4 c. finely chopped green onions
  • 1 clove garlic
  • 1/2 tsp. salt
  • 1/4 tsp. red pepper
  • 3 Tbsp. slivered almonds

Instructions

  1. Bring chicken broth to a boil in a heavy saucepan.
  2. Stir in brown rice, grated raw carrot, finely chopped celery, chopped green onions, minced garlic, salt, and red pepper.
  3. Cover, reduce heat, and simmer for 25 to 30 minutes or until liquid is absorbed.
  4. Stir in toasted slivered almonds.
