Cajun Chicken

Ingredients
- 1 lb. chicken breasts, cut in strips ⓘ
- 2 Tbsp. olive oil ⓘ
- 1 Tbsp. paprika ⓘ
- 2 tsp. chili powder ⓘ
- 1 tsp. onion powder ⓘ
- 1/2 tsp. celery salt ⓘ
- 1/4 tsp. salt ⓘ
- 1/4 tsp. dry mustard ⓘ
- 1/4 tsp. red pepper ⓘ
- 1 cube chicken bouillon ⓘ
- 1 Tbsp. cornstarch ⓘ
- 10 oz. mushrooms, cut in half
- 1 bunch scallions, in 1-inch lengths ⓘ
- 2 Tbsp. chopped parsley ⓘ
Instructions
- Saute chicken in olive oil for 5 minutes.
- Combine paprika, chili powder, onion powder, celery salt, salt, dry mustard, red pepper, and chicken bouillon cube; add to skillet and cook for 1 minute until chicken is cooked through.
- Mix chicken bouillon with 1 cup hot water and dissolve cornstarch in it; add to chicken mixture.
- Cook until slightly thickened.
- Add mushrooms and scallions; stir in chopped parsley before serving.
