Ingredients

  • 1 lb. chicken breasts, cut in strips
  • 2 Tbsp. olive oil
  • 1 Tbsp. paprika
  • 2 tsp. chili powder
  • 1 tsp. onion powder
  • 1/2 tsp. celery salt
  • 1/4 tsp. salt
  • 1/4 tsp. dry mustard
  • 1/4 tsp. red pepper
  • 1 cube chicken bouillon
  • 1 Tbsp. cornstarch
  • 10 oz. mushrooms, cut in half
  • 1 bunch scallions, in 1-inch lengths
  • 2 Tbsp. chopped parsley

Instructions

  1. Saute chicken in olive oil for 5 minutes.
  2. Combine paprika, chili powder, onion powder, celery salt, salt, dry mustard, red pepper, and chicken bouillon cube; add to skillet and cook for 1 minute until chicken is cooked through.
  3. Mix chicken bouillon with 1 cup hot water and dissolve cornstarch in it; add to chicken mixture.
  4. Cook until slightly thickened.
  5. Add mushrooms and scallions; stir in chopped parsley before serving.
