Cajun Shrimp Soup

Ingredients
- 1/2 cup chopped green pepper ⓘ
- 1/4 cup sliced green onion ⓘ
- 1 clove garlic, minced ⓘ
- 1 tablespoon butter or margarine ⓘ
- 3 cups vegetable juice cocktail ⓘ
- 8 ounces clam juice ⓘ
- 1/2 cup water ⓘ
- 1/2 teaspoon salt ⓘ
- 1/4 teaspoon crushed thyme ⓘ
- 1/4 teaspoon crushed basil ⓘ
- 1/8 to 1/4 teaspoon crushed red pepper flakes ⓘ
- 1 bay leaf ⓘ
- 1/2 cup uncooked long grain rice ⓘ
- 12 ounces frozen cooked shrimp ⓘ
- hot pepper sauce, if desired ⓘ
Instructions
- In a large saucepan, sauté green pepper, green onion, and garlic in margarine until tender.
- Stir in vegetable juice, clam juice, water, salt, thyme, basil, red pepper flakes, and bay leaf.
- Bring the mixture to a boil.
- Reduce heat and add rice.
- Cover and simmer for 15 to 20 minutes or until rice is tender.
- Stir in frozen cooked shrimp and simmer uncovered for 3 to 5 minutes or until shrimp are heated through.
- Remove the bay leaf.
- Add hot pepper sauce to individual servings as desired.
